Ingredients and Steps
Big text, no distractions — for the stoveIngredients
- Chicken
- Guntur chili
- Tamarind
Steps
- 1Marinate chicken pieces in turmeric, salt, and a little red chili powder while preparing the rest of the ingredients.
- 2Grind dried Guntur chilies with a little water into a fiery, deep-red chili paste, adjusting the quantity based on how spicy you want the final curry.
- 3Heat oil in a heavy pot and sauté chopped onions until they turn a deep golden-brown, which forms the flavor base.
- 4Add ginger-garlic paste and the ground Guntur chili paste, cooking for two to three minutes over medium heat until fragrant and the raw smell fades.
- 5Add chopped tomatoes and cook until they break down completely into a thick, pulpy base, about eight to ten minutes.
- 6Add the marinated chicken pieces and stir well to coat them in the masala, then cover and cook on medium-low heat for 15 to 20 minutes, stirring occasionally, until the chicken is fully cooked and tender.
- 7Stir in tamarind extract for tang, and simmer uncovered for another five minutes so the gravy thickens to your desired consistency.
- 8Garnish with fresh coriander and serve hot with steamed rice.
