Arancini di Riso
Ingredients

- •Saffron
- •Ground beef
- •Tomato paste
- •Peas
- •Mozzarella
- •Eggs
- •Breadcrumbs
- •Vegetable oil
Steps
- 1Cook rice with a pinch of saffron until tender and let it cool completely so it holds together when shaped.
- 2Meanwhile, brown ground beef with onion and tomato paste, stirring in peas, to make a thick ragu filling.
- 3Scoop a portion of the cooled rice into your palm and press a hollow into the center.
- 4Spoon in a little of the ragu filling along with a cube of mozzarella, then mold more rice around it to fully enclose the filling into a ball or cone shape.
- 5Roll each rice ball in flour, dip it in beaten egg, then coat thoroughly in breadcrumbs.
- 6Heat vegetable oil in a deep pot and fry the arancini in batches until deep golden brown and crisp all over.
- 7Drain briefly on paper towels and let them rest for a minute before serving, since the molten cheese center stays very hot.
- 8Serve warm as a handheld snack, straight from the paper wrapper they are traditionally sold in.
