Ingredients and Steps
Big text, no distractions — for the stoveIngredients
- Fermented soybean
- Pork/vegetables
Steps
- 1Cut pork into bite-sized pieces, or prepare a mix of vegetables if making the vegetarian version.
- 2Heat a little oil in a pan and add chopped garlic, ginger, and dried red chilies, sautéing until fragrant.
- 3Add the pork, or vegetables, and stir-fry over medium-high heat for several minutes until lightly browned or softened.
- 4Crumble the fermented soybean, or axone, directly into the pan, mashing it slightly with the back of a spoon to help it distribute evenly through the dish.
- 5Stir everything together well, letting the pungent aroma of the fermented soybean bloom as it heats through for a couple of minutes.
- 6Add a little water to help everything cook together, then cover and simmer on low heat for 20 to 25 minutes, or longer if using pork, until the meat is tender and the flavors have melded.
- 7Taste and adjust the salt carefully, since fermented soybean is naturally salty and intensely flavored.
- 8Serve hot with steamed rice, being mindful that the aroma is strong and distinctive even after cooking.
