BBQ Pulled Pork

Ingredients

Steps

  1. 1Rub a whole pork shoulder generously with a mix of paprika, brown sugar, salt, and spices, working it into every surface.
  2. 2Let the rubbed pork rest in the refrigerator for at least a few hours, or overnight for deeper flavor.
  3. 3Set up a smoker with wood for indirect heat and bring it to a low, steady temperature.
  4. 4Place the pork shoulder on the smoker and cook it low and slow for many hours, maintaining a steady temperature and adding wood as needed, until the meat turns fall-apart tender.
  5. 5Wrap the pork in foil partway through cooking if the bark darkens too quickly, then continue smoking until done.
  6. 6Remove the pork from the smoker and let it rest, loosely tented, for about 30 minutes.
  7. 7Shred the meat by hand or with two forks, discarding excess fat and any bone.
  8. 8Toss the shredded pork with a tangy vinegar-based sauce and pile it onto a soft bun with coleslaw.
