  1. 1Mix flour with yeast, a little olive oil, and warm water, kneading the dough for about 8 minutes until it turns smooth and elastic.
  2. 2Cover the dough and let it rest near the oven for about an hour, until it doubles in size.
  3. 3Punch the dough down and divide it into small rounds, then roll each one out thin on a floured board.
  4. 4Stir za'atar, sesame seeds, sumac, and a good amount of olive oil together in a bowl until it forms a loose, fragrant paste.
  5. 5Spread the za'atar paste generously over each dough round, right to the edges.
  6. 6Slide the topped rounds onto the hot stone base of the vendor's oven and bake for about 5 minutes, until the edges puff and turn golden.
  7. 7Lift the hot manakish out with a long wooden peel and fold each one in half.
  8. 8Serve it wrapped in paper with fresh mint, sliced cucumber, and tomato tucked inside for the customer to eat on the walk to work.
