Ingredients and Steps

Big text, no distractions — for the stove

Ingredients

  • Meat
  • Onion
  • Yogurt

Steps

  1. 1Cut the meat into medium pieces and marinate briefly with a little salt, ginger-garlic paste, and yogurt while you prepare the rest of the ingredients.
  2. 2Heat oil or ghee in a heavy pot and fry sliced onions until they turn a deep golden-brown, then set aside a portion for garnish and grind the rest into a smooth paste with a splash of water.
  3. 3Add whole spices such as cinnamon, cloves, and green cardamom to the same pot and let them sizzle briefly until fragrant.
  4. 4Add the marinated meat and sear it over medium-high heat for five to seven minutes, stirring occasionally, until it is browned on the outside.
  5. 5Stir in the fried onion paste along with red chili powder and coriander powder, mixing well to coat the meat evenly.
  6. 6Whisk in yogurt gradually, a spoonful at a time, stirring constantly over low heat to prevent it from splitting.
  7. 7Add enough water to reach your desired gravy consistency, then cover and simmer on low heat for 45 minutes to an hour, stirring occasionally, until the meat is tender and the gravy has thickened and turned rich and glossy.
  8. 8Garnish with the reserved fried onions and serve hot with rice or roti.
