Ingredients and Steps
Big text, no distractions — for the stoveIngredients
- Beef cutlet
- Breadcrumbs
- Eggs
- Tomato sauce
- Mozzarella
- Ham
- Oregano
- Garlic
Steps
- 1Pound thin cutlets of beef top round or eye of round between sheets of plastic wrap until they are even and tender, then season them with salt, pepper, and a little minced garlic.
- 2Dip each cutlet in beaten egg and then press it into fine breadcrumbs, coating it fully and pressing the crumbs on so they adhere well during frying.
- 3Shallow-fry the breaded cutlets in hot oil a couple at a time until deeply golden and crisp on both sides, then drain them briefly on paper towels.
- 4Arrange the fried milanesas on a baking sheet or oven-safe platter and spoon a layer of simple tomato sauce over each one, leaving the crisp edges partially exposed.
- 5Top each cutlet generously with sliced mozzarella and, if desired, a slice of ham tucked underneath the cheese for extra richness.
- 6Slide the tray under a hot broiler or into a hot oven just until the cheese is fully melted and starting to bubble and brown in spots.
- 7Finish with a scattering of dried oregano over the melted cheese right before serving.
- 8Serve immediately alongside french fries or a simple salad while the cheese is still stretchy and the breading underneath remains crisp.
