Canterbury Whitebait Fritters

- 1Rinse the whitebait gently in cold water and drain them well in a colander, taking care not to break the delicate little fish apart.
- 2Beat eggs in a large bowl until well combined, then season lightly with salt.
- 3Fold the whitebait directly into the beaten egg, along with a small amount of flour, just enough to lightly bind the mixture without turning it into a thick batter.
- 4Stir in a little chopped parsley for freshness.
- 5Heat butter in a wide frying pan over medium heat until it foams and turns lightly golden.
- 6Spoon portions of the whitebait mixture into the pan, flattening each into a small round patty.
- 7Fry the fritters for about two minutes per side, until the edges turn golden and slightly crisp while the center stays tender.
- 8Transfer the cooked fritters to a plate lined with paper towel to drain briefly.
- 9Serve the fritters warm with a generous squeeze of fresh lemon juice over the top.
