Ingredients
- Beef
- Mustard oil
- Onion
- Ginger
- Garlic
- Cumin
- Coriander seed
- Dried red chili
- Bay leaf
- Black cardamom
- Green chili
Steps
- 1Heat mustard oil in a large heavy pot until it begins to shimmer and lose its raw sharpness.
- 2Add sliced onion and fry for about 10 minutes, stirring frequently, until deeply browned.
- 3Stir in ginger and garlic paste and cook for 2 minutes, until fragrant.
- 4Add cumin, ground coriander seed, dried red chili, bay leaf, and black cardamom, then toast the spices in the hot oil for about 1 minute.
- 5Add the beef pieces and sear them directly in the spice mixture for about 10 minutes, until well coated and browned on the edges.
- 6Pour in enough water to just cover the meat, then bring the pot to a boil before lowering it to a steady simmer.
- 7Cover and cook for about 2 hours, stirring occasionally, until the beef becomes very tender and the gravy turns thick and dark.
- 8Uncover the pot for the final 15 minutes of cooking to let the sauce reduce and intensify.
- 9Finish with whole green chilies stirred in just before serving, alongside plain steamed rice.
