Falafel
Ingredients
- •Dried chickpeas
- •Parsley
- •Cilantro
- •Garlic
- •Onion
- •Cumin
- •Coriander
Steps
- 1Soak dried chickpeas in plenty of water overnight, then drain them thoroughly without cooking.
- 2Combine the raw soaked chickpeas with parsley, cilantro, garlic, onion, cumin, and coriander in a food processor.
- 3Pulse the mixture until it forms a coarse, well-combined paste that holds together when pressed, being careful not to blend it into a smooth puree.
- 4Stir in a little baking soda and let the mixture rest in the refrigerator for about 30 minutes so the flavors meld.
- 5Shape the mixture into small patties or balls using your hands or a falafel scoop.
- 6Heat oil in a deep pot to about 350 degrees Fahrenheit.
- 7Fry the falafel in batches for about 3 to 4 minutes, until deeply golden and crisp outside while staying soft and green inside.
- 8Drain on paper towels and serve in warm flatbread with tahini sauce and pickled vegetables.
