Feijoada
Ingredients
- •Black beans
- •Pork ribs
- •Sausage
- •Bacon
- •Onion
- •Garlic
- •Bay leaves
- •Orange
Steps
- 1Soak black beans in water overnight, then drain.
- 2Place the beans in a large pot with pork ribs, bacon, and sausage, cover generously with water, and bring to a simmer.
- 3Cook for about two hours, skimming any foam and adding more water as needed, until the meats turn tender and the beans soften into a creamy consistency.
- 4In a separate pan, sauté chopped onion and garlic in a little oil until golden.
- 5Stir the sautéed onion and garlic into the pot along with bay leaves, letting everything simmer together for another 30 minutes to deepen the flavor.
- 6Remove some of the meat, chop it into smaller pieces, and return it to the pot to help thicken the stew further.
- 7Season with salt and let the feijoada simmer uncovered for a final stretch, until it reaches a hearty, thick consistency.
- 8Serve with rice, sautéed collard greens, and orange slices on the side to cut through the richness.
