Ingredients and Steps

Big text, no distractions — for the stove

Ingredients

  • Fish
  • Coconut milk
  • Curry leaves

Steps

  1. 1Clean the fish and cut it into pieces, then rub lightly with turmeric and salt and set aside for 15 minutes.
  2. 2Heat coconut oil in a wide pan and add sliced onions, cooking until soft and translucent but not browned.
  3. 3Add ginger, garlic, and slit green chilies, sautéing for a minute until fragrant, then stir in turmeric and a little black pepper.
  4. 4Pour in thin coconut milk and bring it to a gentle simmer, then slide in the fish pieces carefully so they do not break.
  5. 5Cook the fish gently on low heat for eight to ten minutes, spooning the liquid over the top occasionally, until it turns opaque and flakes easily with a fork.
  6. 6Add curry leaves and a splash of thick coconut milk toward the end, warming it through for another two to three minutes without letting the pot boil hard.
  7. 7Adjust the salt and add a small squeeze of lime or a splash of vinegar for a light tang.
  8. 8Serve warm with steamed rice or appam.
