Fried Cheese Curds
Ingredients

- •All-purpose flour
- •Eggs
- •Milk
- •Beer
- •Breadcrumbs
- •Vegetable oil
Steps
- 1Whisk together flour, beer, milk, and a pinch of salt to form a smooth, thick batter, then let it rest for 15 minutes.
- 2In a separate bowl, beat the eggs with a splash of milk.
- 3Set out a plate of breadcrumbs for the final coating.
- 4Heat about 3 inches of vegetable oil in a deep pot or fryer to 375 degrees Fahrenheit.
- 5Dip each cheese curd first into the beer batter, letting the excess drip off, then into the egg wash, and finally roll it in breadcrumbs to coat completely.
- 6Carefully lower the coated curds into the hot oil in small batches.
- 7Fry for about 2 minutes, turning once, until the coating is deep golden brown and the cheese inside just begins to soften.
- 8Lift the curds out with a slotted spoon and drain them briefly on paper towels.
- 9Serve immediately in a paper basket while the outside is crackly and the cheese is warm and squeaky.
