Fried Cheese Curds

  1. 1Whisk together flour, beer, milk, and a pinch of salt to form a smooth, thick batter, then let it rest for 15 minutes.
  2. 2In a separate bowl, beat the eggs with a splash of milk.
  3. 3Set out a plate of breadcrumbs for the final coating.
  4. 4Heat about 3 inches of vegetable oil in a deep pot or fryer to 375 degrees Fahrenheit.
  5. 5Dip each cheese curd first into the beer batter, letting the excess drip off, then into the egg wash, and finally roll it in breadcrumbs to coat completely.
  6. 6Carefully lower the coated curds into the hot oil in small batches.
  7. 7Fry for about 2 minutes, turning once, until the coating is deep golden brown and the cheese inside just begins to soften.
  8. 8Lift the curds out with a slotted spoon and drain them briefly on paper towels.
  9. 9Serve immediately in a paper basket while the outside is crackly and the cheese is warm and squeaky.
