Fried Shrimp Po'Boy

- •Cornmeal
- •All-purpose flour
- •Buttermilk
- •Cayenne pepper
- •Vegetable oil
- •French bread roll
- •Lettuce
- •Tomato
- •Pickles
- •Mayonnaise
- •Hot sauce
Steps
- 1Soak peeled shrimp in buttermilk seasoned with a dash of hot sauce for about 15 minutes to tenderize them.
- 2In a shallow dish, mix cornmeal, flour, cayenne pepper, and salt together.
- 3Heat about 2 inches of vegetable oil in a heavy pot to 350 degrees Fahrenheit.
- 4Lift the shrimp out of the buttermilk, letting the excess drip off, then dredge each one thoroughly in the cornmeal mixture.
- 5Fry the shrimp in small batches for 2 to 3 minutes, until the coating turns golden brown and crisp.
- 6Drain the fried shrimp on a wire rack while you split open a crusty French bread roll.
- 7Spread mayonnaise mixed with a little hot sauce along the inside of the roll.
- 8Layer in shredded lettuce, sliced tomato, and pickles, then pile the hot fried shrimp on top.
- 9Close the sandwich and serve it right away while the shrimp are still crackling hot.
