Ingredients and Steps
Big text, no distractions — for the stoveIngredients
- Fresh reef fish
- Minimal seasoning
Steps
- 1Clean the reef fish thoroughly, scaling and gutting it if it is whole, then pat it completely dry with paper towels.
- 2Make a few shallow diagonal cuts on both sides of the fish so the seasoning and heat penetrate evenly.
- 3Rub the fish lightly with salt, a little black pepper, and a touch of oil, keeping the seasoning minimal so the natural sweetness of the fish remains the star of the dish.
- 4If desired, tuck a few slices of garlic, lime, or fresh herbs into the slits or the cavity for subtle extra aroma.
- 5Let the fish rest for 15 to 20 minutes at room temperature so the seasoning settles in before cooking.
- 6Prepare an open flame or hot grill and lightly oil the grates to prevent sticking.
- 7Grill the fish for four to six minutes per side, depending on its size, turning carefully once the skin releases easily from the grates, until the flesh turns opaque and flakes easily with a fork.
- 8Serve immediately with a wedge of lime, letting the smoky char and clean flavor of the fish speak for itself.
