- 1In a large bowl, combine the ground beef with garlic powder, onion powder, paprika, dried oregano, and a generous amount of salt, then knead the mixture firmly with your hands for several minutes until it turns pale and sticky.
- 2Press the meat tightly into a loaf shape on a baking sheet or mold it onto a vertical skewer to mimic a spit.
- 3Roast the meat in an oven preheated to 350 degrees Fahrenheit for about 1 hour, until the internal temperature reaches 160 degrees Fahrenheit.
- 4Let the meat rest for 15 minutes, then slice it into thin shavings once it has firmed up enough to cut cleanly.
- 5While the meat rests, whisk together the evaporated milk, sugar, and white vinegar in a bowl, letting the mixture thicken into a sweet, tangy sauce over about 10 minutes.
- 6Warm a pita on a dry skillet for about 1 minute per side, until soft and lightly toasted.
- 7Reheat a portion of the sliced meat in a hot pan for 2 to 3 minutes, until the edges crisp slightly.
- 8Pile the meat onto the warm pita, top with chopped tomato and onion, and drizzle generously with the sweet garlic sauce before folding and serving.
