Ingredients

- Pork collar
- Coarse salt
- Sesame oil
- Garlic
- Ssamjang
- Lettuce
- Perilla leaves
- Kimchi
Steps
- 1Slice thick cuts of pork belly and pork collar from the local black pig breed, keeping the pieces fairly thick for grilling.
- 2Season the pork simply with coarse salt, letting it sit at room temperature for about twenty minutes before cooking.
- 3Heat a heavy grill pan or griddle until very hot, then lay the pork pieces on it without crowding the pan.
- 4Grill the pork for several minutes per side, turning occasionally with tongs, until deeply browned on the outside and cooked through but still juicy.
- 5Toward the end of grilling, sear a few whole garlic cloves alongside the pork until softened and lightly charred.
- 6Once cooked, use kitchen scissors to snip the pork into smaller, bite-sized pieces directly on the grill.
- 7Wrap a piece of pork in a lettuce or perilla leaf along with a dab of ssamjang, a slice of grilled garlic, and a little kimchi.
- 8Fold the wrap closed and eat it in one bite, repeating with fresh leaves for each piece of pork.
