Steps
- 1Marinate chicken pieces in garlic, cumin, and a little turmeric, then cook them until browned and mostly cooked through.
- 2Cook rice with turmeric until it turns a bright yellow color, then let it cool slightly so it is easier to handle.
- 3Mix the yellow rice with a little of the chicken cooking liquid to keep it moist and flavorful.
- 4Lay a large bijao or banana leaf flat and place a bed of the seasoned rice in the center.
- 5Nestle a piece of the marinated chicken, a slice of hard-boiled egg, and a black olive into the rice.
- 6Cover with a little more rice to fully enclose the filling, then fold the leaf tightly around the mound into a compact bundle.
- 7Tie the wrapped bundle securely with string or strips of the same leaf.
- 8Boil the wrapped bundles in a large pot of water for about an hour, until the rice inside is fully cooked and firm.
- 9Let the bundles cool slightly before unwrapping and serving, traditionally eaten cold or at room temperature during river journeys and festivals.
