Ingredients and Steps
Big text, no distractions — for the stoveIngredients
- Rice
- Mixed Vegetables
- Toor Dal
- Tamarind
- Sambar Powder
- Coconut
- Curry Leaves
- Mustard Seeds
Steps
- 1Cook rice and toor dal together, either separately or in the same pot, until both are fully soft and can be mashed together easily.
- 2Prepare a tangy tamarind extract and simmer it with a mix of chopped vegetables such as drumstick, carrot, beans, and brinjal until they soften.
- 3Stir in a fragrant sambar-style spice powder along with a portion of ground coconut to thicken the base and deepen the flavor.
- 4Combine the cooked rice and dal with the simmering vegetable and tamarind mixture, stirring well so everything comes together into a soft, slightly mushy one-pot dish.
- 5Adjust the consistency with a little water or reserved cooking liquid so it stays moist without becoming watery.
- 6In a small pan, prepare a tempering of mustard seeds, dried red chilies, and curry leaves in hot oil, letting them crackle before pouring it over the finished rice.
- 7Mix the tempering through so its aroma coats the entire dish evenly.
- 8Serve the kadamba sadam warm, traditionally with a dollop of ghee, papad, or a simple yogurt-based side.
