Steps
- 1Dissolve yeast and a pinch of sugar in warm water and let the mixture stand for about ten minutes, until foamy on top.
- 2Mix the yeast mixture into flour and salt, then knead for about eight minutes, until the dough is smooth and elastic.
- 3Cover the dough and let it rise in a warm spot for about one hour, until roughly doubled in size.
- 4Divide the dough into equal pieces and roll each into a long rope, then twist two ropes together and join the ends to form a ring.
- 5Let the shaped rings rest, covered, for about twenty minutes while you bring a wide pot of water mixed with malt syrup to a gentle boil.
- 6Boil each ring for about thirty seconds per side, until it puffs slightly and rises to the surface, then lift it out with a slotted spoon and drain briefly.
- 7Immediately press the top of each warm ring into a dish of poppy seeds, sesame seeds, or coarse salt so the topping sticks.
- 8Arrange the rings on a baking tray lined with parchment and bake in a hot oven at around two hundred twenty degrees Celsius for about eighteen minutes, until deeply golden and crisp on the outside.
- 9Cool the rings briefly on a wire rack before selling or serving, as street vendors traditionally do, threaded on long dowels or piled in baskets.
