Lahori Nihari
Ingredients

Steps
- 1Heat ghee in a heavy pot over medium-high heat and fry the sliced onion for about 12 minutes, stirring often, until deeply browned and caramelized.
- 2Add ginger and garlic paste and cook for 1 minute, until fragrant.
- 3Stir in the nihari masala spice blend and cook briefly for 1 minute, toasting the spices in the hot ghee.
- 4Add the beef shank pieces and sear them in the spiced ghee for about 8 minutes, turning occasionally, until browned on all sides.
- 5Pour in enough hot water to fully cover the meat, then bring the pot to a boil before reducing it to a very low simmer.
- 6Cover and cook the nihari for about 5 hours, checking occasionally and topping up water as needed, until the beef becomes completely tender and starts falling apart.
- 7Mix the whole wheat flour with a little water into a smooth paste and whisk it into the pot to thicken the gravy, simmering for 15 more minutes.
- 8Taste and adjust the seasoning with salt.
- 9Ladle the nihari into bowls and garnish with julienned ginger, sliced green chili, chopped coriander, and a squeeze of lemon.
