Lahori Nihari

  1. 1Heat ghee in a heavy pot over medium-high heat and fry the sliced onion for about 12 minutes, stirring often, until deeply browned and caramelized.
  2. 2Add ginger and garlic paste and cook for 1 minute, until fragrant.
  3. 3Stir in the nihari masala spice blend and cook briefly for 1 minute, toasting the spices in the hot ghee.
  4. 4Add the beef shank pieces and sear them in the spiced ghee for about 8 minutes, turning occasionally, until browned on all sides.
  5. 5Pour in enough hot water to fully cover the meat, then bring the pot to a boil before reducing it to a very low simmer.
  6. 6Cover and cook the nihari for about 5 hours, checking occasionally and topping up water as needed, until the beef becomes completely tender and starts falling apart.
  7. 7Mix the whole wheat flour with a little water into a smooth paste and whisk it into the pot to thicken the gravy, simmering for 15 more minutes.
  8. 8Taste and adjust the seasoning with salt.
  9. 9Ladle the nihari into bowls and garnish with julienned ginger, sliced green chili, chopped coriander, and a squeeze of lemon.
