Steps
- 1Cook a mixed meat curry of chicken and beef with cinnamon, cardamom, and other warming spices, simmering until the meat is tender and the sauce is thick.
- 2Separately shape a spiced ground meat mixture into small meatballs, called frikkadels, and shallow fry them until browned on all sides.
- 3Fry sliced eggplant in oil until soft and lightly caramelized, then set it aside.
- 4Make a tangy onion and tamarind relish by cooking sliced onion in a sour, spiced tamarind sauce until jammy.
- 5Cook rice in the reserved stock from the meat curry so the grains take on a rich, savory flavor and light brown color.
- 6Lay a square of banana leaf flat and place a portion of the flavored rice in the center.
- 7Arrange spoonfuls of the meat curry, a couple of frikkadels, the fried eggplant, and a little of the onion relish on top of the rice.
- 8Fold the banana leaf over the filling into a secure parcel, securing it with a toothpick or string, then bake or steam the parcels for about twenty minutes so the flavors meld together before unwrapping and serving.
