Maine Lobster Roll

- 1Boil the lobsters in a large pot of salted water for 8 to 10 minutes, until the shells turn bright red, then plunge them into ice water to stop the cooking.
- 2Crack the shells and pick out the meat from the tail, claws, and knuckles, then chop it into bite-sized chunks.
- 3In a bowl, gently fold the lobster meat with mayonnaise, finely diced celery, and a squeeze of lemon juice, being careful not to mash the meat.
- 4Season lightly with salt and pepper and chill the mixture in the refrigerator for at least 20 minutes.
- 5Melt butter in a skillet over medium heat and toast the split-top hot dog buns on their flat sides for about 2 minutes, until golden and crisp.
- 6Spoon the chilled lobster salad generously into each toasted bun, letting it mound over the top.
- 7Scatter chopped chives over the filling for a fresh finish.
- 8Serve right away from the window while the bun is still warm and the lobster salad is cold.
