Massaman Curry

Steps
- 1Simmer the thick part of a can of coconut milk in a pot over medium heat, without stirring too much, until the oil begins to separate and rise to the surface.
- 2Add massaman curry paste to the separated coconut cream and fry it for a few minutes, stirring, until deeply fragrant.
- 3Add chunks of beef to the pot and stir to coat them thoroughly in the fried paste.
- 4Pour in the remaining coconut milk along with cinnamon and cardamom pods, then bring the pot to a gentle simmer.
- 5Cover and cook low and slow for around an hour, until the beef begins to turn tender.
- 6Add potato chunks, onion wedges, and roasted peanuts, then continue simmering for another thirty minutes, until the potatoes are soft and the beef is falling-apart tender.
- 7Season the curry with tamarind paste, palm sugar, and fish sauce, balancing it between sweet, sour, and salty.
- 8Serve hot over steamed jasmine rice.
