Ingredients and Steps

Big text, no distractions — for the stove

Ingredients

  • Wheat wrappers
  • Meat/vegetable filling

Steps

  1. 1Knead a simple dough from wheat flour, water, and a pinch of salt until smooth, then cover and let it rest for 20 to 30 minutes.
  2. 2Prepare the filling by finely chopping or mincing your choice of meat or vegetables, then mix with grated ginger, garlic, chopped spring onion, a little soy sauce, and salt.
  3. 3Divide the rested dough into small balls and roll each one out into a thin, round wrapper, keeping the edges slightly thinner than the center.
  4. 4Place a small spoonful of filling in the center of each wrapper.
  5. 5Gather the edges of the wrapper up around the filling and pleat them together at the top, pinching firmly to seal so the filling does not leak out during steaming.
  6. 6Lightly grease a steamer basket or line it with cabbage leaves to prevent sticking, then arrange the momos with space between them.
  7. 7Steam over boiling water for 12 to 15 minutes until the wrappers turn slightly translucent and the filling is fully cooked through.
  8. 8Serve hot immediately with a spicy tomato-chili chutney on the side.
