Ingredients
- Cooked rice
- Shallots
- Garlic
- Sweet soy sauce
- Shrimp paste
- Chicken or shrimp
- Egg
- Cucumber
Steps
- 1Pound or blend shallots, garlic, and a small amount of shrimp paste into a smooth, fragrant paste.
- 2Heat oil in a wok over medium-high heat and fry the paste for a couple of minutes until it turns aromatic and slightly darker.
- 3Add diced chicken or shrimp and cook, stirring frequently, until the meat is cooked through.
- 4Add day-old cooked rice, breaking up any clumps with the back of the spatula, and stir-fry for a few minutes so the grains separate and heat through evenly.
- 5Pour in sweet soy sauce and toss constantly over high heat until the rice turns evenly coated and slightly charred at the edges.
- 6Push the rice to one side of the wok and fry an egg in the cleared space, or fry it separately in another pan, until the white sets and the yolk stays soft.
- 7Spoon the rice onto a plate and top with the fried egg.
- 8Serve with sliced cucumber and prawn crackers on the side.
