Oaxacan Tlayudas
Ingredients
- •Corn tortilla
- •Refried black beans
- •Oaxaca cheese
- •Lettuce
- •Avocado
- •Tomato
- •Tasajo beef
- •Salsa roja
- •Lard
Steps
- 1Warm a large, thin corn tortilla directly over a charcoal comal until it turns slightly leathery and dotted with brown spots.
- 2Spread a thin layer of lard across the tortilla, then follow with a generous smear of refried black beans all the way to the edges.
- 3Scatter shredded Oaxaca cheese evenly over the beans so it melts as the tortilla continues to cook.
- 4Lay the tortilla back onto the comal and cook it for a few more minutes, until the underside crisps up like a cracker and the cheese turns soft and glossy.
- 5While it cooks, grill strips of tasajo beef over the same open flame until charred at the edges and cooked through.
- 6Slide the crisp tortilla onto a board and top it with shredded lettuce, sliced tomato, and mashed avocado.
- 7Lay the grilled tasajo over one half of the tlayuda and drizzle everything with salsa roja.
- 8Fold the tlayuda in half like a giant taco and cut it into wedges for sharing.
