  1. 1Freeze the ribeye steak for about 30 minutes to firm it up, then slice it as thinly as possible against the grain.
  2. 2Heat a flat griddle or large skillet over high heat with a little vegetable oil.
  3. 3Add sliced onion to the griddle and cook for 5 to 6 minutes, stirring often, until soft and lightly caramelized, then push it to one side.
  4. 4Spread the thin-sliced steak across the hot griddle and chop it into smaller pieces with the edge of a spatula as it cooks.
  5. 5Season the meat with salt and pepper and cook for 2 to 3 minutes, until no longer pink.
  6. 6Mix the cooked onion back into the steak, then lay slices of provolone cheese directly over the meat.
  7. 7Let the cheese melt for about 1 minute, folding it gently into the steak once softened.
  8. 8Split open a fresh hoagie roll and scoop the cheesy steak mixture directly into it.
  9. 9Wrap the sandwich in paper and serve immediately while it is hot and the cheese is still stretchy.
