Pizza Margherita
Ingredients
- •Pizza dough
- •San Marzano tomatoes
- •Mozzarella
- •Fresh basil
- •Olive oil
- •Salt
Steps
- 1Punch down a ball of well-fermented pizza dough and, on a floured surface, stretch it by hand from the center outward into a thin round, leaving a slightly thicker rim.
- 2Spread crushed San Marzano tomatoes over the base in a thin, even layer, leaving the rim bare.
- 3Season the tomato layer lightly with salt.
- 4Tear fresh mozzarella into small pieces and scatter them evenly over the tomato.
- 5Drizzle a little olive oil over the top.
- 6Slide the pizza into a very hot wood-fired oven, or the hottest setting of a home oven with a preheated stone.
- 7Bake for one to two minutes in a wood-fired oven, or several minutes in a home oven, watching closely until the crust puffs up and chars in spots and the cheese melts and bubbles.
- 8Remove the pizza, scatter fresh basil leaves over the top, and slice immediately.
