- 1Season a thin steak with salt and pepper and pan fry it in butter over medium high heat for about two minutes per side, until browned, then set it aside.
- 2In the same pan, quickly sear slices of linguiça sausage, fresh sausage, and ham for about two minutes total, just to warm them through and pick up a little color.
- 3Assemble a sandwich by layering the steak, sausages, and ham between two slices of bread.
- 4Cover the entire sandwich generously with sliced cheese, making sure the edges are fully enclosed.
- 5To make the sauce, melt butter in a saucepan and whisk in flour to form a paste, cooking for one minute over low heat.
- 6Gradually whisk in beer, beef stock, and a spoonful of chopped tomato, then simmer the sauce for about ten minutes, until it thickens slightly and turns a deep amber color.
- 7Season the sauce with a little chili for heat and adjust the salt to taste.
- 8Place the cheese covered sandwich under a hot grill or broiler for about four minutes, until the cheese melts completely and turns bubbly and golden in spots.
- 9Set the sandwich on a plate, pour the hot beer sauce generously over the top, and serve immediately with a portion of French fries alongside.
