Queensland Grilled Barramundi

  1. 1Pat the barramundi fillets dry and season both sides well with salt and pepper.
  2. 2Dice ripe mango and red onion finely, then toss them together with chopped chili, chopped coriander, and a squeeze of lime juice to make a quick salsa.
  3. 3Let the salsa sit for a few minutes so the flavors combine while the grill heats up.
  4. 4Brush a hot grill or heavy pan with macadamia oil and lay the barramundi skin side down.
  5. 5Cook the fillets for about 4 minutes without moving them, until the skin turns crisp and releases easily from the grill.
  6. 6Flip the fillets carefully and add a small knob of butter to the pan, tilting it so the melted butter bastes over the fish.
  7. 7Cook for another 2 to 3 minutes, until the flesh turns opaque and flakes easily under gentle pressure.
  8. 8Rest the fish for a minute off the heat.
  9. 9Plate the barramundi skin side up and spoon the mango salsa generously alongside, finishing with a final squeeze of lime.
