Queensland Grilled Barramundi

Steps
- 1Pat the barramundi fillets dry and season both sides well with salt and pepper.
- 2Dice ripe mango and red onion finely, then toss them together with chopped chili, chopped coriander, and a squeeze of lime juice to make a quick salsa.
- 3Let the salsa sit for a few minutes so the flavors combine while the grill heats up.
- 4Brush a hot grill or heavy pan with macadamia oil and lay the barramundi skin side down.
- 5Cook the fillets for about 4 minutes without moving them, until the skin turns crisp and releases easily from the grill.
- 6Flip the fillets carefully and add a small knob of butter to the pan, tilting it so the melted butter bastes over the fish.
- 7Cook for another 2 to 3 minutes, until the flesh turns opaque and flakes easily under gentle pressure.
- 8Rest the fish for a minute off the heat.
- 9Plate the barramundi skin side up and spoon the mango salsa generously alongside, finishing with a final squeeze of lime.
