San Diego-Style California Burrito

  1. 1Marinate thin steak strips for carne asada in lime juice, garlic, and a blend of spices for at least 30 minutes.
  2. 2Grill the marinated steak over high heat for 2 to 3 minutes per side, until charred on the outside and cooked through, then chop it into small pieces.
  3. 3Meanwhile, fry or bake the French fries until golden brown and crisp, then season them lightly with salt.
  4. 4Warm a large flour tortilla on a hot griddle for about 20 seconds per side, until soft and pliable.
  5. 5Lay the tortilla flat and spread a layer of guacamole down the center.
  6. 6Pile on the chopped carne asada, followed by a generous handful of the crispy fries.
  7. 7Sprinkle shredded cheddar cheese over the top and add spoonfuls of sour cream and pico de gallo.
  8. 8Fold in the sides of the tortilla and roll it tightly into a burrito.
  9. 9Wrap the burrito in foil and grill it seam-side down for a minute to seal before serving.
