Ingredients and Steps
Big text, no distractions — for the stoveIngredients
- Wheat flour
- Yeast
- Poppy seed/nut filling
Steps
- 1Dissolve yeast in warm water with a pinch of sugar and let it sit for 10 minutes until it turns frothy.
- 2Mix the yeast mixture into wheat flour with a little salt and knead into a soft, smooth dough, then cover and let it rise in a warm place for about two hours until doubled in size.
- 3Meanwhile, prepare the filling by lightly toasting poppy seeds or nuts and grinding them coarsely with a little sugar or salt to taste.
- 4Punch down the risen dough and divide it into equal portions, then flatten each portion slightly and place a spoonful of filling in the center.
- 5Gather the edges up and around the filling, pinching to seal, then shape each piece into a smooth ball.
- 6Arrange the stuffed balls in a steamer lined with a damp cloth, leaving space between them, and steam over boiling water for about 20 to 25 minutes until they look puffed and feel firm to the touch.
- 7Serve the siddu warm, split open and drizzled generously with melted ghee, or alongside a spicy chutney.
