Ingredients and Steps

Big text, no distractions — for the stove

Ingredients

  • Smoked pork
  • Fermented bamboo shoot

Steps

  1. 1Cut the smoked pork into bite-sized pieces, checking that any tough or overly charred bits are trimmed away.
  2. 2Soak the fermented bamboo shoot briefly in water and drain, which softens its texture and tempers its sharp aroma slightly.
  3. 3Heat a little oil in a heavy pot and add chopped garlic, ginger, and dried red chilies, sautéing until fragrant.
  4. 4Add the smoked pork pieces and stir-fry for a few minutes so they pick up flavor from the aromatics and release some of their smoky fat.
  5. 5Add the fermented bamboo shoot to the pot along with a little water, stirring to combine everything evenly.
  6. 6Cover and simmer on low heat for 25 to 30 minutes, stirring occasionally, until the pork is tender and the bamboo shoot has softened and absorbed the smoky, spicy flavors of the pot.
  7. 7Check the seasoning, adding salt carefully since both the smoked pork and fermented bamboo shoot can already be quite salty and pungent.
  8. 8Serve hot with steamed rice.
