Tacos al Pastor
Ingredients
- •Pork
- •Dried guajillo chilies
- •Achiote paste
- •Pineapple
- •Onion
- •Cilantro
- •Corn tortillas
Steps
- 1Toast dried guajillo chilies briefly in a dry pan, then soak them in hot water until softened.
- 2Blend the softened chilies with achiote paste, vinegar, garlic, and spices into a smooth marinade.
- 3Slice pork thinly and toss it with the marinade, making sure every piece is well coated, then refrigerate for at least a few hours.
- 4Stack the marinated pork slices tightly onto a vertical trompo skewer, placing a piece of pineapple at the top.
- 5Roast the stacked meat slowly in front of a heat source, letting the outer layer crisp and caramelize as it turns.
- 6Shave off thin, charred slices of pork directly onto small warm corn tortillas as they finish cooking.
- 7Top each taco with a small piece of grilled pineapple, chopped onion, and cilantro.
- 8Serve immediately with lime wedges and salsa on the side.
