Terai-Style Chatpate

Steps
- 1Set a large steel bowl on the street cart and tip in a generous mound of puffed rice.
- 2Add diced boiled potato and boiled chickpeas, then scatter over finely chopped onion, tomato, and green chili.
- 3Whisk tamarind pulp with a little water and a spoonful of chaat masala until it forms a thin, tangy sauce.
- 4Pour the tamarind sauce over the puffed rice mixture and toss everything vigorously with two long spoons, the way vendors do it to coat every grain evenly.
- 5Squeeze fresh lemon juice over the top and sprinkle on a little more chaat masala and salt to sharpen the flavor.
- 6Toss once more, then finish with a shower of crunchy sev and chopped coriander leaves.
- 7Spoon the chatpate into a small paper cone or bowl and hand it over immediately, before the puffed rice has any chance to soften.
