Ingredients and Steps

Big text, no distractions — for the stove

Ingredients

  • Noodles
  • Broth
  • Vegetables
  • Meat

Steps

  1. 1Prepare a broth by simmering meat bones or a vegetable stock base with garlic, ginger, and a few whole spices for at least 30 minutes to build a flavorful base.
  2. 2Strain the broth if needed, then return it to the pot and bring it back to a simmer.
  3. 3Heat a little oil in a separate pan and sauté chopped garlic, ginger, and sliced vegetables such as carrot, cabbage, and bell pepper until just softened.
  4. 4Add these sautéed vegetables to the simmering broth along with a splash of soy sauce and a pinch of chili powder for depth.
  5. 5If using meat, add thin slices to the broth at this stage and let them cook through, about five to seven minutes.
  6. 6Cook the noodles separately in boiling water according to their type until just tender, then drain.
  7. 7Divide the cooked noodles among serving bowls and ladle the hot broth with vegetables and meat over the top.
  8. 8Garnish with chopped spring onion and fresh coriander, and serve immediately while piping hot.
