Ingredients

  • Ground beef
  • Onion
  • Berbere spice
  • Garlic
  • Jalapeno
  • Thin pastry sheets
  • Vegetable oil
  • Flour paste

Steps

  1. 1Cook finely chopped onion and garlic in a hot pan for a few minutes until softened and translucent.
  2. 2Add ground beef, breaking it apart with a spoon, and cook for about 8 minutes until it browns evenly.
  3. 3Stir in berbere spice and finely chopped jalapeno, cooking for a few more minutes until the mixture turns fragrant and any liquid evaporates.
  4. 4Let the filling cool completely before handling it further.
  5. 5Cut thin pastry sheets into long strips and place a spoonful of the cooled filling near one corner of each strip.
  6. 6Fold the pastry over the filling in a triangular shape, continuing to fold it triangle over triangle down the length of the strip, the way street vendors do it in quick, practiced motions.
  7. 7Seal the final edge with a dab of flour paste mixed with water, pressing it firmly closed.
  8. 8Heat vegetable oil in a deep pan until hot, then fry the sambusas in batches for about 4 minutes, turning occasionally, until they turn golden brown and crisp on every side.
  9. 9Drain the sambusas briefly on paper before handing them out hot, often with a small side of extra berbere or green chili sauce.
