Addis Ababa Meat Sambusa
Ingredients

Steps
- 1Cook finely chopped onion and garlic in a hot pan for a few minutes until softened and translucent.
- 2Add ground beef, breaking it apart with a spoon, and cook for about 8 minutes until it browns evenly.
- 3Stir in berbere spice and finely chopped jalapeno, cooking for a few more minutes until the mixture turns fragrant and any liquid evaporates.
- 4Let the filling cool completely before handling it further.
- 5Cut thin pastry sheets into long strips and place a spoonful of the cooled filling near one corner of each strip.
- 6Fold the pastry over the filling in a triangular shape, continuing to fold it triangle over triangle down the length of the strip, the way street vendors do it in quick, practiced motions.
- 7Seal the final edge with a dab of flour paste mixed with water, pressing it firmly closed.
- 8Heat vegetable oil in a deep pan until hot, then fry the sambusas in batches for about 4 minutes, turning occasionally, until they turn golden brown and crisp on every side.
- 9Drain the sambusas briefly on paper before handing them out hot, often with a small side of extra berbere or green chili sauce.
