  • Bread dough
  • Crème fraîche
  • Onion
  • Bacon lardons
  • Nutmeg
  • Black pepper

Steps

  1. 1Stretch a small ball of bread dough out on a floured surface, rolling and pulling it until it forms a very thin, almost translucent rectangle.
  2. 2Spread crème fraîche in a thin, even layer over the dough, leaving a small border bare around the edges.
  3. 3Season the crème fraîche generously with a little nutmeg and black pepper.
  4. 4Scatter thinly sliced onion evenly across the surface.
  5. 5Fry bacon lardons briefly in a hot pan just until they begin to render their fat, then scatter them over the onions while still warm.
  6. 6Slide the tarte onto a well floured peel and transfer it into a very hot wood fired oven.
  7. 7Bake the tarte flambée for only a few minutes, watching closely, until the edges char slightly and the onions turn soft and lightly browned.
  8. 8Pull the tarte out while the center is still tender and the crust is crisp at the edges.
  9. 9Cut it into rough squares with a pizza wheel and serve it immediately, piping hot from the fire.
