Alsatian Tarte Flambée

Steps
- 1Stretch a small ball of bread dough out on a floured surface, rolling and pulling it until it forms a very thin, almost translucent rectangle.
- 2Spread crème fraîche in a thin, even layer over the dough, leaving a small border bare around the edges.
- 3Season the crème fraîche generously with a little nutmeg and black pepper.
- 4Scatter thinly sliced onion evenly across the surface.
- 5Fry bacon lardons briefly in a hot pan just until they begin to render their fat, then scatter them over the onions while still warm.
- 6Slide the tarte onto a well floured peel and transfer it into a very hot wood fired oven.
- 7Bake the tarte flambée for only a few minutes, watching closely, until the edges char slightly and the onions turn soft and lightly browned.
- 8Pull the tarte out while the center is still tender and the crust is crisp at the edges.
- 9Cut it into rough squares with a pizza wheel and serve it immediately, piping hot from the fire.
