Ingredients and Steps

Big text, no distractions — for the stove

Ingredients

  • Lamb or chicken
  • Yogurt
  • Garlic
  • Paprika
  • Flatbread
  • Tomato
  • Onion

Steps

  1. 1Slice lamb or chicken into thin, even layers and marinate them in yogurt, garlic, paprika, and other spices for at least a few hours or overnight.
  2. 2Stack the marinated layers tightly onto a vertical rotisserie skewer, pressing them together so the stack holds its shape as it turns.
  3. 3Set the skewer to rotate slowly in front of a heat source, letting the outside roast and caramelize gradually.
  4. 4As the outer layer cooks and turns golden brown, shave off thin slices with a long sharp knife, working from top to bottom.
  5. 5Continue rotating and shaving as needed so only the crisped outer surface is served each time.
  6. 6Warm flatbread briefly on a griddle or in a hot pan.
  7. 7Pile the shaved meat onto the flatbread and top with chopped tomato, onion, and a garlicky yogurt or chili sauce.
  8. 8Wrap or fold the flatbread and serve immediately while the meat is hot.
