Ingredients

  • Dungeness crab meat
  • Breadcrumbs
  • Mayonnaise
  • Egg
  • Dijon mustard
  • Green onion
  • Old Bay seasoning
  • Butter
  • Lemon

Steps

  1. 1Pick through the crab meat carefully to remove any small bits of shell or cartilage, keeping the lumps as intact as possible.
  2. 2In a bowl, whisk together the egg, mayonnaise, Dijon mustard, and a spoonful of seasoning until smooth.
  3. 3Gently fold in the crab meat, chopped green onion, and breadcrumbs, mixing just enough to bind everything without breaking up the crab too much.
  4. 4Cover the mixture and refrigerate it for 30 minutes so the cakes hold together better when cooked.
  5. 5Shape the chilled mixture into patties about 3 inches wide and 1 inch thick.
  6. 6Melt butter in a skillet over medium heat until it foams.
  7. 7Cook the crab cakes for 4 to 5 minutes per side, until deep golden brown and heated through.
  8. 8Transfer the cakes to a paper towel-lined plate to drain briefly.
  9. 9Serve warm with a wedge of lemon and a light drizzle of extra mayonnaise or tartar sauce.
