Dungeness Crab Cakes
Ingredients
- •Dungeness crab meat
- •Breadcrumbs
- •Mayonnaise
- •Egg
- •Dijon mustard
- •Green onion
- •Old Bay seasoning
- •Butter
- •Lemon
Steps
- 1Pick through the crab meat carefully to remove any small bits of shell or cartilage, keeping the lumps as intact as possible.
- 2In a bowl, whisk together the egg, mayonnaise, Dijon mustard, and a spoonful of seasoning until smooth.
- 3Gently fold in the crab meat, chopped green onion, and breadcrumbs, mixing just enough to bind everything without breaking up the crab too much.
- 4Cover the mixture and refrigerate it for 30 minutes so the cakes hold together better when cooked.
- 5Shape the chilled mixture into patties about 3 inches wide and 1 inch thick.
- 6Melt butter in a skillet over medium heat until it foams.
- 7Cook the crab cakes for 4 to 5 minutes per side, until deep golden brown and heated through.
- 8Transfer the cakes to a paper towel-lined plate to drain briefly.
- 9Serve warm with a wedge of lemon and a light drizzle of extra mayonnaise or tartar sauce.
