Ingredients and Steps

Big text, no distractions — for the stove

Ingredients

  • White fish fillets
  • Flour
  • Beer
  • Potatoes
  • Vegetable oil
  • Salt
  • Malt vinegar

Steps

  1. 1Peel the potatoes and cut them into thick chips.
  2. 2Fry the chips in oil heated to about 325 degrees Fahrenheit for about 5 minutes, until they cook through but stay pale, then remove and drain.
  3. 3Whisk flour with cold beer and a pinch of salt until just combined, leaving the batter slightly lumpy and light.
  4. 4Pat the fish fillets dry and dust them lightly with flour, then dip them into the beer batter, letting the excess drip off.
  5. 5Raise the oil temperature to about 375 degrees Fahrenheit and lower the battered fish in carefully.
  6. 6Fry for about 6 to 8 minutes, until the coating turns crisp and deep golden and the fish inside flakes easily.
  7. 7Return the chips to the hot oil and fry for another 2 to 3 minutes, until golden and crunchy.
  8. 8Drain the fish and chips on paper towels, season with salt, and serve together with malt vinegar.
