Fish and Chips
Ingredients
- •White fish fillets
- •Flour
- •Beer
- •Potatoes
- •Vegetable oil
- •Salt
- •Malt vinegar
Steps
- 1Peel the potatoes and cut them into thick chips.
- 2Fry the chips in oil heated to about 325 degrees Fahrenheit for about 5 minutes, until they cook through but stay pale, then remove and drain.
- 3Whisk flour with cold beer and a pinch of salt until just combined, leaving the batter slightly lumpy and light.
- 4Pat the fish fillets dry and dust them lightly with flour, then dip them into the beer batter, letting the excess drip off.
- 5Raise the oil temperature to about 375 degrees Fahrenheit and lower the battered fish in carefully.
- 6Fry for about 6 to 8 minutes, until the coating turns crisp and deep golden and the fish inside flakes easily.
- 7Return the chips to the hot oil and fry for another 2 to 3 minutes, until golden and crunchy.
- 8Drain the fish and chips on paper towels, season with salt, and serve together with malt vinegar.
