Ingredients and Steps
Big text, no distractions — for the stoveIngredients
- Fava beans
- Garlic
- Lemon juice
- Olive oil
- Cumin
- Parsley
Steps
- 1Simmer dried fava beans slowly in water for a couple of hours, until they turn very soft, or use pre-cooked or canned beans for a quicker version.
- 2Drain the beans, reserving a little of the cooking liquid.
- 3Return the beans to the pot and mash them partially with a fork or potato masher, leaving some texture rather than pureeing completely.
- 4Stir in crushed garlic, a squeeze of lemon juice, and a pinch of ground cumin, adding a splash of the reserved liquid if the mixture seems dry.
- 5Warm the beans through over low heat, stirring gently.
- 6Spoon the beans into a shallow serving bowl.
- 7Drizzle generously with olive oil and scatter chopped parsley over the top.
- 8Serve warm alongside flatbread, chopped tomato, and onion.
