Big text, no distractions — for the stoveIngredients
- Spinach
- Fenugreek leaves
- Spices
Steps
- 1Wash the spinach and fenugreek leaves thoroughly to remove any grit, then roughly chop them.
- 2Boil the leaves in a little water for about 10 minutes until fully wilted and soft.
- 3Drain the greens, reserving the cooking liquid, and mash them coarsely using a hand masher, leaving some texture.
- 4Heat a little oil or ghee in a pan and add cumin seeds along with chopped garlic and green chili, sautéing until fragrant and lightly golden.
- 5Add the mashed greens back to the pan along with a splash of the reserved cooking liquid to loosen the mixture.
- 6Stir in a spoonful of rice flour or besan mixed with water to help thicken the gravy slightly.
- 7Simmer everything together on low heat for eight to ten minutes, stirring occasionally, until the mixture is well combined and lightly thickened.
- 8Season with salt and serve hot with steamed rice.
