Ingredients and Steps

Big text, no distractions — for the stove

Ingredients

  • Chana dal/Toor dal
  • Mixed vegetables
  • Coconut
  • Cumin

Steps

  1. 1Cut mixed vegetables into small, even pieces and rinse chana dal or toor dal.
  2. 2Combine the vegetables and dal in a pot with water, turmeric, and salt, then cook, either on the stovetop or in a pressure cooker, until both the vegetables and lentils are fully soft.
  3. 3Meanwhile, grind fresh coconut with cumin seeds and a green chili into a smooth paste using a small amount of water.
  4. 4Once the vegetable-lentil mixture is cooked, stir in the ground coconut paste and mix well to combine evenly.
  5. 5Simmer the koottu on low heat for five to seven minutes so the coconut paste cooks through and the mixture thickens slightly.
  6. 6Heat a little oil in a small pan and temper mustard seeds and curry leaves until they pop and turn fragrant.
  7. 7Pour the tempering over the koottu and stir once to combine.
  8. 8Serve warm as a side dish alongside rice and sambar or rasam.
