Ingredients and Steps

Big text, no distractions — for the stove

Ingredients

  • Chicken wings
  • Potato starch
  • Garlic
  • Soy sauce
  • Gochujang
  • Rice syrup
  • Sesame seeds

Steps

  1. 1Cut chicken into bite-sized pieces and season lightly with salt and pepper.
  2. 2Toss the chicken in potato starch until evenly coated, shaking off the excess.
  3. 3Fry the chicken in batches in oil heated to about 325 degrees Fahrenheit for about 6 minutes, until lightly golden but not fully crisp, then remove and let it rest for 5 minutes.
  4. 4Raise the oil temperature to about 375 degrees Fahrenheit and fry the chicken a second time for 3 to 4 minutes, until the skin turns deeply golden and very crisp.
  5. 5While the chicken rests, simmer gochujang, minced garlic, soy sauce, and rice syrup in a small saucepan for a few minutes until the mixture turns glossy and slightly thickened.
  6. 6Drain the fried chicken on a rack and transfer it to a large bowl.
  7. 7Pour the hot glaze over the chicken and toss quickly to coat every piece evenly.
  8. 8Sprinkle with toasted sesame seeds and serve immediately while still crisp.
